Steve Brand, executive chef of UpStairs on the Square in Cambridge, Mass., creates a self-described “big steaming pot of turkey chili goodness” as National Turkey Federation’s (NTF) first 2009 “Turkey Trendsetter,” according to a NTF press release.

NTF’s “Turkey Trendsetter” program features chefs at www.EatTurkey.com from around the nation who incorporate turkey through creative and unique ways on their menus.

Brand’s turkey chili combines ground turkey with fresh ingredients including tomatoes, kidney beans, butternut squash and carrots.

“My menu is seasonal and changes often so I am able to create dishes with turkey for a variety of dining options,” said Brand. “Turkey is a healthy, naturally low-calorie and locally-accessible protein, so it enables me to be very innovative in the dishes I prepare.”
